Ingredients
  

For the Shrimp
  • 1 lb shrimp peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper optional for heat
  • 1 tsp salt
  • 1 tsp black pepper
For the Rice
  • 1 cup white rice or brown rice
  • 2 cups water
  • 1 tbsp lime juice
  • 1/4 cup cilantro chopped
For the Avocado
  • 2 medium avocados sliced
For the Cilantro Lime Sauce
  • 1/2 cup Greek yogurt
  • 1 lime juice
  • 1/4 cup cilantro chopped
  • 1 clove garlic minced
  • 1/4 tsp salt

Method
 

Prepare the Rice
  1. In a medium saucepan, bring 2 cups of water to a boil. Add the rice, cover, and reduce heat to low. Cook for 15 minutes or until rice is tender and water is absorbed.
  2. Remove from heat and stir in lime juice and chopped cilantro. Fluff with a fork and set aside.
Cook the Shrimp
  1. In a large skillet, heat olive oil over medium-high heat. Add shrimp and season with garlic powder, paprika, cayenne pepper, salt, and black pepper.
  2. Cook for 2-3 minutes on each side until shrimp are pink and opaque. Remove from heat.
Make the Cilantro Lime Sauce
  1. In a mixing bowl, whisk together Greek yogurt, lime juice, chopped cilantro, minced garlic, and salt until smooth.
Assemble the Bowls
  1. In serving bowls, layer the cilantro lime rice, followed by the cooked shrimp, sliced avocado, and drizzle with cilantro lime sauce.
  2. Garnish with additional cilantro if desired and serve immediately.
