White Chocolate Reese’s Cheesecake Cookies

Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Reese's peanut butter cups chopped
Topping
  • 1 cup white chocolate chips

Method
 

Prepare the Cookie Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Make the Cheesecake Filling
  1. In another bowl, beat the cream cheese and granulated sugar until smooth.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. Fold in the chopped Reese's peanut butter cups.
Assemble the Cookies
  1. Scoop a tablespoon of cookie dough and flatten it slightly on a baking sheet.
  2. Place a teaspoon of cheesecake filling in the center, then cover with another tablespoon of cookie dough.
  3. Repeat with remaining dough and filling, spacing cookies about 2 inches apart.
Bake the Cookies
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  2. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Add the Topping
  1. Melt the white chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  2. Drizzle the melted white chocolate over the cooled cookies.
  3. Let the chocolate set before serving.
