Ingredients
  

Salad Base
  • 4 cups watermelon cubed, seedless
  • 1 cup feta cheese crumbled
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh mint leaves chopped
Dressing
  • 2 tablespoons olive oil extra virgin
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Ingredients
  1. Cube the watermelon into bite-sized pieces and place in a mixing bowl.
  2. Thinly slice the red onion and chop the fresh mint leaves.
Make the Dressing
  1. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper.
Combine the Salad
  1. Add the cubed watermelon, crumbled feta, sliced red onion, and chopped mint to the mixing bowl.
  2. Drizzle the dressing over the salad and gently toss to combine.
Serve
  1. Transfer the salad to a serving dish and enjoy immediately.
