Ingredients
  

Salad Base
  • 2 cups broccoli florets fresh, chopped
  • 1 large apple cored and diced
  • 1/2 cup carrots shredded
  • 1/4 cup red onion finely chopped
Dressing
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon mustard Dijon or yellow
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground
Toppings
  • 1/4 cup sunflower seeds optional, for crunch
  • 1/4 cup dried cranberries optional, for sweetness

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the broccoli florets, diced apple, shredded carrots, and chopped red onion.
  2. Toss the ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, mustard, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss until all ingredients are coated.
  2. Sprinkle with sunflower seeds and dried cranberries if using, then serve immediately.
