Ingredients
  

Salad Base
  • 1 can chickpeas drained and rinsed
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Tzatziki Dressing
  • 1 cup Greek yogurt plain
  • 1 medium garlic minced
  • 1 medium lemon juiced
  • 1/2 cup dill fresh, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, and parsley.
  2. Toss the ingredients together until well mixed.
Make the Tzatziki Dressing
  1. In a separate bowl, whisk together the Greek yogurt, minced garlic, lemon juice, dill, salt, and black pepper until smooth.
Combine and Serve
  1. Pour the tzatziki dressing over the salad and toss gently to combine.
  2. Serve immediately or refrigerate for 30 minutes to let flavors meld.
