Ingredients
  

Chicken Meatballs
  • 1 lb ground chicken preferably lean
  • 1/2 cup breadcrumbs Italian seasoned
  • 1/4 cup Parmesan cheese grated
  • 1 large egg beaten
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
Orzo and Sauce
  • 1 cup orzo pasta
  • 1 can diced tomatoes 14.5 oz
  • 1 cup chicken broth low sodium
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 1/4 cup fresh basil chopped for garnish

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, parsley, salt, and pepper.
  3. Mix until well combined and form into meatballs, about 1 inch in diameter.
  4. Place meatballs on a baking sheet and bake for 20 minutes or until cooked through.
Cook the Orzo and Sauce
  1. In a pot, bring chicken broth to a boil and add orzo. Cook according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat. Add diced tomatoes and Italian seasoning, simmer for 5 minutes.
  3. Once the meatballs are done, add them to the skillet with the sauce and stir to coat.
  4. Drain the orzo and add it to the skillet, mixing everything together.
Serve
  1. Serve the Tuscan chicken meatballs and orzo hot, garnished with fresh basil.

Notes
