Prepare the Meatballs
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, parsley, salt, and pepper.
- Mix until well combined and form into meatballs, about 1 inch in diameter.
- Place meatballs on a baking sheet and bake for 20 minutes or until cooked through.
Cook the Orzo and Sauce
- In a pot, bring chicken broth to a boil and add orzo. Cook according to package instructions until al dente.
- In a large skillet, heat olive oil over medium heat. Add diced tomatoes and Italian seasoning, simmer for 5 minutes.
- Once the meatballs are done, add them to the skillet with the sauce and stir to coat.
- Drain the orzo and add it to the skillet, mixing everything together.
Serve
- Serve the Tuscan chicken meatballs and orzo hot, garnished with fresh basil.
