Using a small cookie scoop, place one scoop of the ricotta mixture onto each noodle. Spread it evenly, then lay about 8-10 turkey pepperoni slices along one edge of each noodle before rolling it up tightly.
Pour any remaining marinara sauce over the rolls and sprinkle shredded mozzarella cheese on top. Bake for about 15-20 minutes until the cheese is melted and bubbling.
