Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt for seasoning
  • 1 teaspoon black pepper for seasoning
  • 1 tablespoon olive oil for cooking
Gravy
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Toppings
  • 1 cup shredded jack cheese
  • 1 cup sautéed mushrooms optional
  • 1 cup sautéed onions optional

Method
 

Prepare the Chicken
  1. Preheat the oven to 375°F (190°C).
  2. Using a meat mallet, pound the chicken breasts to an even thickness.
  3. Season both sides of the chicken breasts with salt and pepper.
Cook the Chicken
  1. In a skillet, heat olive oil over medium heat.
  2. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
  3. Remove chicken from skillet and set aside.
Make the Gravy
  1. In the same skillet, melt butter over medium heat.
  2. Whisk in flour and cook for 1-2 minutes until lightly browned.
  3. Slowly add chicken broth, garlic powder, and onion powder, whisking constantly until thickened.
Assemble and Bake
  1. Place the cooked chicken breasts in a baking dish.
  2. Pour the gravy over the chicken and top with shredded jack cheese, mushrooms, and onions if using.
  3. Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.
