Method
Prepare the Chicken
- Preheat the oven to 375°F (190°C).
- Using a meat mallet, pound the chicken breasts to an even thickness.
- Season both sides of the chicken breasts with salt and pepper.
Cook the Chicken
- In a skillet, heat olive oil over medium heat.
- Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
- Remove chicken from skillet and set aside.
Make the Gravy
- In the same skillet, melt butter over medium heat.
- Whisk in flour and cook for 1-2 minutes until lightly browned.
- Slowly add chicken broth, garlic powder, and onion powder, whisking constantly until thickened.
Assemble and Bake
- Place the cooked chicken breasts in a baking dish.
- Pour the gravy over the chicken and top with shredded jack cheese, mushrooms, and onions if using.
- Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.
