Ingredients
  

Rice Base
  • 2 cups white rice uncooked
Protein
  • 1 lb ground beef or turkey
Taco Seasoning
  • 1 packet taco seasoning mix
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 1 cup corn canned or frozen
  • 1 cup black beans canned, drained and rinsed
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup sliced jalapeños optional
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

Cook the Rice
  1. Rinse the rice under cold water until the water runs clear. Cook the rice according to package instructions in a rice cooker or on the stovetop.
Prepare the Beef
  1. In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
  2. Add the taco seasoning and follow package instructions, typically adding water and simmering for 5 minutes.
Assemble the Bowl
  1. In serving bowls, layer the cooked rice, seasoned beef, corn, black beans, cherry tomatoes, and shredded lettuce.
  2. Top with shredded cheese, sour cream, jalapeños, and cilantro as desired.
