Ingredients
  

Protein
  • 1 lb ground beef or ground turkey
  • 1 tbsp taco seasoning store-bought or homemade
Base
  • 2 cups cooked rice white or brown
Toppings
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 1 cup cheddar cheese shredded
  • 1 avocado sliced for garnish
  • 1/2 cup sour cream for serving
  • 1/4 cup salsa for serving

Method
 

Prepare the Protein
  1. In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
  2. Drain excess fat and stir in taco seasoning, cooking for an additional 2 minutes.
Assemble the Bowl
  1. In serving bowls, layer cooked rice as the base.
  2. Top with seasoned ground beef, black beans, corn, cherry tomatoes, and shredded lettuce.
  3. Sprinkle with cheddar cheese, and add slices of avocado on top.
  4. Serve with sour cream and salsa on the side.
