Sweet Potatoes
  • 2 large sweet potatoes peeled and cubed
Ground Beef
  • 1 pound ground beef 80/20 blend recommended
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Cottage Cheese
  • 1 cup cottage cheese for topping
Hot Honey
  • 1/4 cup hot honey for drizzling
Olive Oil
  • 2 tablespoons olive oil for roasting sweet potatoes
Fresh Herbs
  • 1/4 cup fresh parsley chopped, for garnish

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 425°F (220°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
  2. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.
Cook Ground Beef
  1. In a skillet over medium heat, add the ground beef. Break it apart with a spatula and cook until browned, about 5-7 minutes.
  2. Add garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir to combine and cook for an additional 2-3 minutes until fully cooked.
Assemble Bowls
  1. In a bowl, layer roasted sweet potatoes, cooked ground beef, and cottage cheese.
  2. Drizzle with hot honey and garnish with fresh parsley before serving.
