Ingredients
  

For the Chicken
  • 1 lb boneless chicken breasts grilled and sliced
  • 1 tbsp olive oil for grilling
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
For the Rice
  • 2 cups cooked rice white or brown
  • 1 cup corn kernels fresh or frozen
  • 1 cup black beans canned, rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
For the Toppings
  • 1/2 cup feta cheese crumbled
  • 1/4 cup cilantro chopped
  • 1 lime juiced
  • 1 tbsp hot sauce optional

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine olive oil, paprika, garlic powder, salt, and black pepper.
  3. Coat the chicken breasts with the spice mixture.
  4. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  5. Remove from grill and let rest before slicing.
Cook the Rice and Corn
  1. Cook rice according to package instructions.
  2. In a skillet, add corn kernels and sauté for 5 minutes until heated through.
Assemble the Bowl
  1. In each bowl, layer cooked rice, black beans, grilled chicken, sautéed corn, and cherry tomatoes.
  2. Top with sliced avocado, crumbled feta, chopped cilantro, lime juice, and hot sauce if desired.
