Ingredients
  

Chicken and Marinade
  • 1 lb boneless chicken breasts cut into strips
  • 2 tbsp olive oil for grilling
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 lime juiced
Street Corn
  • 2 ears corn grilled and kernels removed
  • 1/4 cup mayonnaise
  • 1/4 cup cotija cheese crumbled
  • 1 tbsp cilantro chopped
  • 1 tsp lime juice
Rice and Toppings
  • 1 cup white rice uncooked
  • 2 cups water
  • 1 avocado sliced
  • 1 cup black beans drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 lime cut into wedges

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and lime juice. Add chicken strips and marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
Prepare the Street Corn
  1. Grill the corn until charred, about 10 minutes. Remove from heat and let cool.
  2. Once cooled, cut the kernels off the cob and mix with mayonnaise, cotija cheese, cilantro, and lime juice.
Cook the Rice
  1. In a rice cooker, combine rice and water. Cook according to rice cooker instructions.
Assemble the Bowl
  1. In a bowl, layer cooked rice, grilled chicken, street corn mixture, black beans, cherry tomatoes, and avocado slices.
  2. Serve with lime wedges on the side.

Notes
