Prepare the Chicken
- In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and lime juice. Add chicken strips and marinate for at least 15 minutes.
- Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
Prepare the Street Corn
- Grill the corn until charred, about 10 minutes. Remove from heat and let cool.
- Once cooled, cut the kernels off the cob and mix with mayonnaise, cotija cheese, cilantro, and lime juice.
Cook the Rice
- In a rice cooker, combine rice and water. Cook according to rice cooker instructions.
Assemble the Bowl
- In a bowl, layer cooked rice, grilled chicken, street corn mixture, black beans, cherry tomatoes, and avocado slices.
- Serve with lime wedges on the side.
