Ingredients
  

  • 1.5 cups rolled oats
  • 1 cup raw cashews
  • 0.5 cup creamy cashew butter
  • 0.25 cup pure maple syrup
  • 0.25 cup Medjool dates, pitted (about 3-4)
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 1 cup freeze-dried strawberries, crushed
  • 0.25 cup white chocolate chips
  • 1 tsp coconut oil
  • to taste freeze-dried strawberries for topping

Method
 

  1. In a food processor, add the rolled oats and raw cashews. Pulse until they form a fine, flour-like consistency.
  2. Add the pitted Medjool dates into the processor and pulse until finely chopped and evenly distributed.
  3. Add the creamy cashew butter, pure maple syrup, vanilla extract, and salt to the processor. Blend until a sticky dough forms.
  4. Transfer the dough to a mixing bowl and fold in the crushed freeze-dried strawberries.
  5. Using a cookie scoop or wet hands, scoop and roll the dough into small balls and arrange on a parchment-lined tray.
  6. Place the tray in the freezer for about 20-30 minutes to firm up the bites.
  7. In a microwave-safe bowl, combine white chocolate chips and coconut oil. Melt in 30-second increments until smooth.
