Ingredients
  

Salad Base
  • 4 cups fresh strawberries sliced
  • 2 cups mixed greens such as spinach and arugula
  • 1 cup granola for crunch
Dressing
  • 1/2 cup Greek yogurt plain
  • 2 tablespoons honey
  • 1 tablespoon lemon juice freshly squeezed
  • 1/4 teaspoon vanilla extract

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the sliced strawberries and mixed greens.
  2. Gently toss the ingredients together until well mixed.
Make the Dressing
  1. In a separate bowl, whisk together the Greek yogurt, honey, lemon juice, and vanilla extract until smooth.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to coat.
  2. Top with granola just before serving for added crunch.
