Ingredients
  

Salad Base
  • 2 cups cabbage shredded
  • 1 cup carrots julienned
  • 1 cup cucumber sliced
  • 1 cup red bell pepper sliced
  • 1 cup fresh herbs such as mint and cilantro
  • 1 cup bean sprouts
Peanut Dressing
  • 1/4 cup peanut butter smooth
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon sesame oil
  • 2 tablespoons water to thin the dressing

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded cabbage, julienned carrots, sliced cucumber, sliced red bell pepper, fresh herbs, and bean sprouts.
  2. Toss the salad ingredients together until well mixed.
Make the Peanut Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, maple syrup, sesame oil, and water until smooth.
  2. Adjust the consistency by adding more water if necessary.
Combine and Serve
  1. Drizzle the peanut dressing over the salad and toss to combine.
  2. Serve immediately, garnished with extra herbs if desired.

Notes
