Ingredients
  

  • 4 ounces cream cheese softened
  • 1 large egg
  • 1 tablespoon olive oil
  • ½ teaspoon dried dill
  • 2 cups fresh spinach chopped and packed
  • ¾ cup crumbled feta
  • 2 teaspoons bacon bits
  • to taste salt
  • to taste pepper
  • 1 sheet frozen puff pastry thawed
  • 1 tablespoon butter melted

Method
 

  1. Prepare the muffin pan by spraying nine cups with cooking spray.
  2. Soften the cream cheese in the microwave and mix with egg, olive oil, and dill.
  3. Combine spinach, feta, and bacon bits in a bowl, then add the cream cheese mixture and season.
  4. Cut the puff pastry into nine squares and line the muffin cups.
  5. Fill the pastry cups with the spinach mixture and pinch the pastry to seal.
  6. Bake in a preheated oven at 400°F (200°C) for about 20 minutes until golden brown.
  7. Cool for 10 minutes in the pan before serving.
