Prepare Filling
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add chopped spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper.
- Remove from heat and stir in crumbled feta and mozzarella cheese.
Assemble Quesadillas
- Heat a clean skillet over medium heat and add butter.
- Place one tortilla in the skillet, then spread a portion of the filling over half of the tortilla.
- Fold the tortilla in half and cook for 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes.
- Repeat with remaining tortillas and filling.
Serve
- Cut quesadillas into wedges and serve warm with salsa or sour cream.
