Ingredients
  

Filling
  • 2 cups fresh spinach washed and chopped
  • 1 cup feta cheese crumbled
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon garlic minced
  • 1 teaspoon black pepper to taste
  • 1 teaspoon salt to taste
Quesadilla
  • 8 large flour tortillas
  • 1 tablespoon butter for frying

Method
 

Prepare Filling
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add chopped spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper.
  3. Remove from heat and stir in crumbled feta and mozzarella cheese.
Assemble Quesadillas
  1. Heat a clean skillet over medium heat and add butter.
  2. Place one tortilla in the skillet, then spread a portion of the filling over half of the tortilla.
  3. Fold the tortilla in half and cook for 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes.
  4. Repeat with remaining tortillas and filling.
Serve
  1. Cut quesadillas into wedges and serve warm with salsa or sour cream.
