Sourdough Pesto Grilled Cheese

Ingredients
  

Bread
  • 8 slices sourdough bread thickly sliced
Cheese
  • 8 oz sharp cheddar cheese sliced or shredded
  • 4 oz mozzarella cheese sliced or shredded
Pesto
  • 1/2 cup basil pesto store-bought or homemade
Butter
  • 4 tbsp unsalted butter softened

Method
 

Prepare the Sandwiches
  1. Spread 1 tablespoon of pesto on one side of each slice of sourdough bread.
  2. Layer the cheddar and mozzarella cheese on top of the pesto on 4 slices of bread.
  3. Top with the remaining slices of bread, pesto side down.
Cook the Sandwiches
  1. Heat a skillet over medium heat and add 1 tablespoon of butter.
  2. Once melted, place 2 sandwiches in the skillet and cook for about 3-4 minutes until golden brown.
  3. Flip the sandwiches, add another tablespoon of butter, and cook for another 3-4 minutes until the cheese is melted.
  4. Repeat with the remaining sandwiches.
Serve
  1. Remove the sandwiches from the skillet, let cool for a minute, then slice and serve warm.
