Method
Prepare the Sandwiches
- Spread 1 tablespoon of pesto on one side of each slice of sourdough bread.
- Layer the cheddar and mozzarella cheese on top of the pesto on 4 slices of bread.
- Top with the remaining slices of bread, pesto side down.
Cook the Sandwiches
- Heat a skillet over medium heat and add 1 tablespoon of butter.
- Once melted, place 2 sandwiches in the skillet and cook for about 3-4 minutes until golden brown.
- Flip the sandwiches, add another tablespoon of butter, and cook for another 3-4 minutes until the cheese is melted.
- Repeat with the remaining sandwiches.
Serve
- Remove the sandwiches from the skillet, let cool for a minute, then slice and serve warm.
