Ingredients
  

Pasta
  • 8 oz elbow macaroni
Cheese Sauce
  • 4 tbsp unsalted butter for roux
  • 4 tbsp all-purpose flour for roux
  • 2 cups whole milk warm
  • 1 cup smoked Gouda cheese shredded
  • 1 cup sharp cheddar cheese shredded
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Topping
  • 1/2 cup panko breadcrumbs
  • 2 tbsp unsalted butter melted
  • 1/4 cup parmesan cheese grated

Method
 

Cook Pasta
  1. In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Make Cheese Sauce
  1. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden.
  2. Gradually whisk in the warm milk, stirring constantly until the mixture thickens, about 5-7 minutes.
  3. Remove from heat and stir in the smoked Gouda, cheddar, garlic powder, onion powder, salt, and pepper until smooth.
Combine and Bake
  1. Preheat the oven to 350°F (175°C). In a large bowl, combine the cooked pasta and cheese sauce, mixing well.
  2. Transfer the mixture to a greased baking dish.
  3. In a small bowl, mix the panko breadcrumbs with melted butter and parmesan cheese. Sprinkle over the mac and cheese.
  4. Bake for 20 minutes or until the top is golden and crispy.

Notes
