Prepare the Bell Peppers
- Preheat the oven to 375°F (190°C). Cut the bell peppers in half lengthwise and remove the seeds.
- Place the bell pepper halves cut side up on a baking sheet.
Make the Filling
- In a mixing bowl, combine the shredded chicken, black beans, corn, and salsa. Mix well.
Fill the Peppers
- Spoon the filling mixture evenly into each bell pepper half.
- Top each filled pepper with shredded cheese.
Bake
- Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
Serve
- Remove from the oven and let cool slightly. Top with diced avocado, green onions, cilantro, and a dollop of Greek yogurt before serving.
