Ingredients
  

Bell Pepper Boats
  • 4 medium bell peppers halved and seeded
Filling
  • 1 cup cooked chicken shredded
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup salsa your choice
  • 1 cup shredded cheese low-fat
Toppings
  • 1 cup avocado diced
  • 0.5 cup green onions sliced
  • 0.5 cup cilantro chopped
  • 0.5 cup Greek yogurt as a sour cream substitute

Method
 

Prepare the Bell Peppers
  1. Preheat the oven to 375°F (190°C). Cut the bell peppers in half lengthwise and remove the seeds.
  2. Place the bell pepper halves cut side up on a baking sheet.
Make the Filling
  1. In a mixing bowl, combine the shredded chicken, black beans, corn, and salsa. Mix well.
Fill the Peppers
  1. Spoon the filling mixture evenly into each bell pepper half.
  2. Top each filled pepper with shredded cheese.
Bake
  1. Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let cool slightly. Top with diced avocado, green onions, cilantro, and a dollop of Greek yogurt before serving.
