Ingredients
  

  • 14 oz chicken or turkey sausage cut into 1/2-inch slices
  • 2 medium sweet potatoes cut into 1/2-inch cubes
  • 2 cups broccoli cut into 1/2-inch florets
  • 1 tablespoon unsalted butter
  • 4 medium cloves garlic minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • 2 tablespoons minced fresh parsley

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Cut the sausage into slices, peel and cube the sweet potatoes, and chop the broccoli into florets.
  3. Arrange the sausage, sweet potatoes, and broccoli on a large sheet pan in a single layer.
  4. In a small saucepan, melt the butter, sauté the garlic, then stir in honey, soy sauce, vinegar, salt, and pepper. Simmer for 2-3 minutes.
  5. Pour the honey garlic sauce over the arranged ingredients and toss gently.
  6. Roast in the oven for about 25-30 minutes, stirring halfway through.
  7. Garnish with fresh parsley before serving.
