Salisbury Meatballs and Mashed Potatoes

Ingredients
  

Meatballs
  • 1 pound ground beef 80% lean
  • 1/2 cup bread crumbs plain or seasoned
  • 1 large egg beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Gravy
  • 2 tablespoons olive oil
  • 1 cup beef broth low sodium
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
Mashed Potatoes
  • 2 pounds russet potatoes peeled and cubed
  • 1/2 cup milk warm
  • 1/4 cup butter unsalted
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Meatballs
  1. In a mixing bowl, combine ground beef, bread crumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
Cook the Meatballs
  1. Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned on all sides, about 10 minutes.
  2. Remove meatballs from the skillet and set aside.
Make the Gravy
  1. In the same skillet, add flour and cook for 1 minute, stirring constantly.
  2. Gradually whisk in beef broth and Worcestershire sauce. Bring to a simmer and cook until thickened, about 5 minutes.
  3. Return meatballs to the skillet and coat with gravy. Simmer for an additional 5 minutes.
Prepare the Mashed Potatoes
  1. Boil potatoes in a pot of salted water until tender, about 15 minutes. Drain well.
  2. Add warm milk, butter, salt, and pepper to the potatoes. Mash until smooth and creamy.
Serve
  1. Plate the mashed potatoes and top with Salisbury meatballs and gravy. Serve hot.
