Ingredients
  

Dough Ingredients
  • 2 cups all-purpose flour plus extra for dusting
  • 1 cup pumpkin puree canned or homemade
  • 1 tablespoon fresh rosemary finely chopped
  • 1 packet active dry yeast about 2 1/4 teaspoons
  • 1 tablespoon sugar to activate yeast
  • 1 teaspoon salt
  • 1 tablespoon olive oil for richness
  • 3/4 cup warm water about 110°F

  • 1 tablespoon olive oil for brushing
  • 1 teaspoon sea salt for sprinkling

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Add pumpkin puree, olive oil, and chopped rosemary to the yeast mixture.
  3. Gradually add flour and salt, mixing until a soft dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
Shape and Bake the Rolls
  1. Preheat the oven to 375°F (190°C).
  2. Punch down the risen dough and divide it into 12 equal pieces.
  3. Shape each piece into a ball and place them on a greased baking sheet.
  4. Cover the rolls with a kitchen towel and let them rise for another 30 minutes.
  5. Brush the tops with olive oil and sprinkle with sea salt.
  6. Bake in the preheated oven for 20-25 minutes until golden brown.
  7. Remove from the oven and let cool slightly before serving.
