Roasted Tomatoes with Burrata

Ingredients
  

  • 2 pints cherry tomatoes or grape tomatoes
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 teaspoon balsamic vinegar optional
  • 1 clove garlic minced
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1 ball fresh burrata cheese about 8 ounces
  • fresh basil leaves for garnish
  • crusty bread for serving (optional)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Rinse cherry tomatoes under cold water, then pat them dry.
  3. In a large mixing bowl, combine cherry tomatoes with olive oil, sea salt, black pepper, minced garlic, and thyme. Toss gently.
  4. Spread the seasoned tomatoes on a baking sheet lined with parchment paper and roast for about 20-25 minutes until blistered.
  5. Drizzle balsamic vinegar over the tomatoes during the last 5 minutes of roasting if desired.
  6. Let burrata cheese sit at room temperature for 15-20 minutes before serving.
  7. Assemble by placing roasted tomatoes in a serving dish, tearing burrata over the top, and garnishing with basil.
