Preheat your oven to 400°F (200°C).
Rinse cherry tomatoes under cold water, then pat them dry.
In a large mixing bowl, combine cherry tomatoes with olive oil, sea salt, black pepper, minced garlic, and thyme. Toss gently.
Spread the seasoned tomatoes on a baking sheet lined with parchment paper and roast for about 20-25 minutes until blistered.
Drizzle balsamic vinegar over the tomatoes during the last 5 minutes of roasting if desired.
Let burrata cheese sit at room temperature for 15-20 minutes before serving.
Assemble by placing roasted tomatoes in a serving dish, tearing burrata over the top, and garnishing with basil.
