Ingredients
  

For the Shrimp and Red Snapper
  • 1 lb red snapper fillets skinless
  • 1 lb shrimp peeled and deveined
  • 2 tbsp olive oil for cooking
  • 1 tbsp Cajun seasoning store-bought or homemade
  • 1 cup chicken broth low sodium
  • 1 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tbsp parsley chopped for garnish
For the Grits
  • 1 cup grits stone-ground preferred
  • 4 cups water or chicken broth
  • 1 cup heavy cream for creaminess
  • 1 cup cheddar cheese shredded
  • 1 tbsp butter for flavor
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

Prepare the Grits
  1. In a pot, bring water or chicken broth to a boil. Slowly whisk in the grits.
  2. Reduce heat to low and cook, stirring occasionally, for about 20 minutes until thickened.
  3. Stir in heavy cream, cheddar cheese, butter, salt, and black pepper. Keep warm.
Cook the Shrimp and Red Snapper
  1. In a skillet, heat olive oil over medium heat. Season the red snapper fillets with Cajun seasoning.
  2. Add the snapper to the skillet and cook for about 4-5 minutes on each side until cooked through. Remove and set aside.
  3. In the same skillet, add garlic and shrimp. Cook until shrimp are pink, about 3-4 minutes.
  4. Add chicken broth and lemon juice, simmer for 2 minutes. Return snapper to the skillet to warm through.
Serve
  1. Spoon the creamy grits onto plates, top with the shrimp and red snapper mixture.
  2. Garnish with chopped parsley and serve immediately.

Notes
