Ingredients
  

Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 tablespoons red curry paste adjust to taste
  • 4 cups vegetable broth or chicken broth
  • 1 can coconut milk full-fat for creaminess
  • 2 cups mixed vegetables carrots, bell peppers, etc.
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon lime juice freshly squeezed
Dumplings
  • 1 cup all-purpose flour or gluten-free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup water adjust as needed
  • 1 tablespoon chopped fresh cilantro for flavor

Method
 

Prepare the Soup
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Add red curry paste and cook for 2 minutes, stirring frequently.
  4. Pour in vegetable broth and coconut milk, bringing the mixture to a simmer.
  5. Add mixed vegetables and soy sauce, cooking for an additional 10 minutes until vegetables are tender.
  6. Stir in lime juice just before serving.
Make the Dumplings
  1. In a bowl, combine flour, baking powder, and salt.
  2. Gradually add water, mixing until a soft dough forms. Fold in chopped cilantro.
  3. Drop spoonfuls of the dough into the simmering soup, cooking for 5-7 minutes until dumplings are fluffy and cooked through.
Serve
  1. Ladle the soup into bowls, ensuring each serving has dumplings. Garnish with additional cilantro if desired.
