Ingredients
  

Cake
  • 1 can pumpkin puree 15 oz
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk adjust for consistency

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Mix until well combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
Make the Frosting
  1. In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  2. Gradually add powdered sugar, mixing until well combined.
  3. Stir in vanilla extract and milk until the desired consistency is reached.
Assemble the Cake
  1. Once the cake has cooled completely, spread the cream cheese frosting evenly over the top.
