Ingredients
  

Cheese Mixture
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese sharp
  • 1/2 cup pumpkin puree canned or fresh
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chopped fresh chives for garnish
  • 1/2 tsp salt
Coating
  • 1 cup crushed pecans or walnuts
  • 1 tbsp paprika for color

Method
 

Prepare Cheese Mixture
  1. In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, pumpkin puree, garlic powder, onion powder, and salt. Mix until well combined.
  2. Cover the mixture with plastic wrap and refrigerate for about 10 minutes to firm up.
Shape and Coat
  1. Once the mixture is firm, shape it into a ball and then gently flatten the top to create a pumpkin shape.
  2. In a separate bowl, mix crushed pecans and paprika. Roll the cheese ball in the mixture until fully coated.
Serve
  1. Transfer the cheese ball to a serving platter. Garnish with chopped chives to resemble a pumpkin stem.
  2. Serve with crackers or vegetable sticks.
