Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Pesto
  • 1 cup prepared pesto
Bruschetta Topping
  • 2 cups cherry tomatoes, diced
  • 1 cup fresh basil, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Cheese
  • 1 cup mozzarella cheese, shredded

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper.
  2. Grill the chicken for 6-7 minutes on each side or until fully cooked and juices run clear.
Make the Bruschetta Topping
  1. In a mixing bowl, combine diced cherry tomatoes, chopped basil, balsamic vinegar, olive oil, salt, and pepper. Mix well.
Assemble the Dish
  1. Once the chicken is cooked, spread a generous amount of pesto on each piece.
  2. Top with the bruschetta mixture and sprinkle with shredded mozzarella cheese.
  3. Place the assembled chicken on a baking sheet and return to the grill for an additional 5 minutes, or until the cheese is melted.
Serve
  1. Remove from the grill and let rest for a few minutes before serving. Enjoy!
