Preheat your oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper.
In a large mixing bowl, combine granulated sugar, light corn syrup, melted butter, pure vanilla extract, and a large egg. Reserve 2 tablespoons of this mixture for later.
Stir in the chopped pecans until well coated.
Unroll the Pillsbury Crescent Rolls and separate them into individual triangles. Spoon about 2 to 3 tablespoons of the pecan filling onto the widest end of each triangle.
Roll each triangle from the wide end to the narrow end, tucking in any filling that spills out.
Bake in the preheated oven for about 8 minutes until they start to set.
Brush each roll with the reserved sugar mixture and return to the oven for another 5 minutes or until lightly golden brown.
