Ingredients
  

Wet Ingredients
  • 1 cup peanut butter creamy or crunchy
  • 1 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup rolled oats old-fashioned
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Mix-ins
  • 1 cup chocolate chips semi-sweet

Method
 

Prepare the Oven
  1. Preheat the oven to 350°F (175°C).
Mix Wet Ingredients
  1. In a mixing bowl, combine peanut butter, brown sugar, egg, and vanilla extract. Mix until smooth.
Combine Dry Ingredients
  1. In another bowl, whisk together rolled oats, flour, baking soda, and salt.
Combine Mixtures
  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in chocolate chips.
Shape Cookies
  1. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Bake
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Cool
  1. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
