Ingredients
  

  • 2.5 cups all-purpose flour Dry ingredient
  • 1 teaspoon baking powder Dry ingredient
  • 1 teaspoon baking soda Dry ingredient
  • 0.5 teaspoon kosher salt Dry ingredient
  • 1 cup unsalted butter Softened
  • 1.5 cups granulated sugar Divided
  • 0.75 cup light brown sugar Packed
  • 2 large eggs
  • 2 cups creamy peanut butter
  • 1 teaspoon vanilla extract

Method
 

  1. In a medium-sized bowl, combine your all-purpose flour, baking powder, baking soda, and kosher salt. Set this mixture aside.
  2. Beat together the softened unsalted butter, 1 cup of granulated sugar, and packed light brown sugar until creamy and smooth.
  3. Add in the eggs, vanilla extract, and creamy peanut butter to the butter-sugar mixture. Beat until well combined.
  4. Gradually add your flour mixture into the creamy peanut butter batter. Mix gently until just combined.
  5. Cover your mixing bowl tightly with plastic wrap and refrigerate for about one hour.
  6. Preheat your oven to 350 degrees F (175 degrees C). Roll dough into balls and coat in sugar before placing on a parchment-lined baking sheet.
  7. Bake your cookies for 10-12 minutes until lightly golden brown around the edges but still soft in the center.
