Method
Cook the Chicken
- In a large pot, heat olive oil over medium heat. Add the chicken pieces and season with salt, pepper, smoked paprika, chipotle powder, garlic powder, and onion powder. Cook until the chicken is browned and cooked through, about 5-7 minutes.
Add Pasta and Broth
- Add the penne pasta and chicken broth to the pot. Stir to combine and bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes, or until the pasta is al dente.
Add Cream and Cheese
- Stir in the heavy cream and shredded cheddar cheese until melted and creamy. If using, add the frozen peas and cook for an additional 2-3 minutes until heated through.
Serve
- Remove from heat, and serve hot, garnished with additional cheese if desired.
