Ingredients
  

Chicken and Pasta
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 8 oz penne pasta or any pasta of choice
  • 1 cup chicken broth low sodium preferred
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese plus more for topping
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chipotle powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste
  • 0.5 cup frozen peas optional

Method
 

Cook the Chicken
  1. In a large pot, heat olive oil over medium heat. Add the chicken pieces and season with salt, pepper, smoked paprika, chipotle powder, garlic powder, and onion powder. Cook until the chicken is browned and cooked through, about 5-7 minutes.
Add Pasta and Broth
  1. Add the penne pasta and chicken broth to the pot. Stir to combine and bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes, or until the pasta is al dente.
Add Cream and Cheese
  1. Stir in the heavy cream and shredded cheddar cheese until melted and creamy. If using, add the frozen peas and cook for an additional 2-3 minutes until heated through.
Serve
  1. Remove from heat, and serve hot, garnished with additional cheese if desired.

Notes
