After your sausage is browned, toss in the diced onion and bell peppers. Stir them in with the sausage and cook for another 3-4 minutes until the vegetables are softened.
Once your veggies are tender, sprinkle in the Cajun seasoning, garlic powder, cayenne pepper (if using), salt, and pepper. Stir everything together for about a minute. Next, pour in your pasta along with the chicken broth and stir to combine before bringing it to a gentle boil.
Reduce the heat to low after reaching a boil, cover your pot, and allow it to simmer for about 10-12 minutes or until the pasta is cooked al dente. Stir occasionally to prevent sticking.
Once your pasta is cooked, remove the lid and reduce heat slightly. Pour in the heavy cream and stir well, followed by adding shredded Parmesan cheese. Mix until you have a rich and creamy sauce. If adding spinach, toss it in now.
Taste your dish and adjust with more salt or pepper based on your preference. You can also add more Cajun seasoning for an extra kick.
