One Pot Creamy Cajun Sausage Pasta

Ingredients
  

  • 12 ounces smoked sausage (Andouille or kielbasa)
  • 8 ounces pasta (penne or rigatoni)
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup diced onion
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional) for extra spice
  • 1 cup fresh spinach (optional)
  • Salt and pepper to taste
  • Chopped parsley for garnish

Method
 

  1. Start by slicing your smoked sausage into bite-sized pieces. In a large pot or skillet over medium heat, add the olive oil and let it warm up for a minute. Once hot, add the sausage and sauté until browned, about 5-7 minutes.
  2. After your sausage is browned, toss in the diced onion and bell peppers. Stir them in with the sausage and cook for another 3-4 minutes until the vegetables are softened.
  3. Once your veggies are tender, sprinkle in the Cajun seasoning, garlic powder, cayenne pepper (if using), salt, and pepper. Stir everything together for about a minute. Next, pour in your pasta along with the chicken broth and stir to combine before bringing it to a gentle boil.
  4. Reduce the heat to low after reaching a boil, cover your pot, and allow it to simmer for about 10-12 minutes or until the pasta is cooked al dente. Stir occasionally to prevent sticking.
  5. Once your pasta is cooked, remove the lid and reduce heat slightly. Pour in the heavy cream and stir well, followed by adding shredded Parmesan cheese. Mix until you have a rich and creamy sauce. If adding spinach, toss it in now.
  6. Taste your dish and adjust with more salt or pepper based on your preference. You can also add more Cajun seasoning for an extra kick.
  7. Serve your creamy Cajun sausage pasta hot straight from the pot! Garnish with chopped parsley.
