Ingredients
  

Sausage and Rice
  • 1 lb smoked sausage sliced
  • 1 cup long-grain rice rinsed
  • 2 cups chicken broth
  • 1 cup BBQ sauce sweet and tangy
  • 1 medium bell pepper diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp black pepper to taste
  • 1 tsp salt to taste

Method
 

Cook the Sausage
  1. In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
  2. Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté for another 3-4 minutes until the vegetables are softened.
Add Rice and Broth
  1. Stir in the rinsed rice, chicken broth, BBQ sauce, smoked paprika, salt, and black pepper.
  2. Bring the mixture to a boil, then reduce heat to low and cover the skillet.
Simmer
  1. Let it simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid.
  2. Remove from heat and let it sit covered for 5 minutes before serving.
