Ingredients
  

Chicken Meatballs
  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Orzo and Vegetables
  • 1 cup orzo pasta
  • 2 cups chicken broth low sodium
  • 1 cup spinach fresh, chopped
  • 1 cup cherry tomatoes halved
  • 1 medium onion diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Meatballs
  1. In a mixing bowl, combine ground chicken, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and black pepper. Mix until well combined.
  2. Form the mixture into 1-inch meatballs and set aside.
Cook the Meatballs
  1. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove from skillet and set aside.
Cook the Orzo
  1. In the same skillet, add diced onion and cook until translucent, about 3-4 minutes.
  2. Add orzo and chicken broth to the skillet. Bring to a boil, then reduce heat to a simmer. Cook for 10-12 minutes, stirring occasionally, until orzo is tender.
Combine and Serve
  1. Stir in spinach and cherry tomatoes, then return the meatballs to the skillet. Cook for an additional 3-5 minutes until heated through and spinach is wilted.
  2. Serve warm, garnished with additional Italian seasoning if desired.
