Old Fashioned Banana Bread

Ingredients
  

  • 3 medium bananas extra ripe, mashed (about 1 1/4 to 1 1/2 cups)
  • 1 cup white granulated sugar
  • 1/3 cup canola oil
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 1/3 cups all-purpose flour sifted
  • 1 tsp baking soda
  • 1/2 tsp salt

Method
 

  1. Preheat the oven to 350°F (175°C) and prepare a 9x5 loaf pan with nonstick spray and parchment paper.
  2. Mash the bananas in a mixing bowl until smooth with a few lumps, then mix in the sugar.
  3. Add the eggs, vanilla extract, and canola oil to the banana mixture and mix until blended.
  4. In another bowl, sift together the flour, baking soda, and salt.
  5. Gently stir the dry ingredients into the banana mixture until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, checking for doneness with a toothpick.
  7. Let the banana bread cool completely in the pan before slicing.
