Ingredients
  

Chicken
  • 1 whole Meyer lemon chicken about 4-5 pounds
Marinade
  • 2 tablespoons olive oil extra virgin
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper freshly ground
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 2 Meyer lemons sliced for stuffing and garnish
  • 4 cloves garlic smashed

Method
 

Prepare the Chicken
  1. Preheat the oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a small bowl, mix olive oil, sea salt, black pepper, rosemary, and thyme.
  4. Rub the marinade all over the chicken, including under the skin.
  5. Stuff the cavity with sliced Meyer lemons and smashed garlic.
Roast the Chicken
  1. Place the chicken breast-side up in a roasting pan.
  2. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  3. Baste the chicken with the pan juices every 30 minutes.
  4. Let the chicken rest for 10-15 minutes before carving.
Serve
  1. Carve the chicken and serve with additional lemon slices and pan juices.

Notes
