Method
Prepare the Chicken
- Preheat the oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry with paper towels.
- In a small bowl, mix olive oil, sea salt, black pepper, rosemary, and thyme.
- Rub the marinade all over the chicken, including under the skin.
- Stuff the cavity with sliced Meyer lemons and smashed garlic.
Roast the Chicken
- Place the chicken breast-side up in a roasting pan.
- Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Baste the chicken with the pan juices every 30 minutes.
- Let the chicken rest for 10-15 minutes before carving.
Serve
- Carve the chicken and serve with additional lemon slices and pan juices.
