Method
Cook the Beef
- In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes.
- Drain excess fat if necessary.
Add Vegetables
- Add the chopped onion, garlic, and bell pepper to the skillet. Sauté for 3-4 minutes until softened.
- Stir in the diced potatoes, corn, and black beans.
Season and Cook
- Sprinkle in the chili powder, cumin, paprika, salt, and pepper. Mix well.
- Cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender.
Finish and Serve
- Remove from heat and sprinkle with shredded cheddar cheese. Cover until cheese melts.
- Garnish with cilantro and serve with lime wedges.
