Ingredients
  

Main Ingredients
  • 1 lb ground beef 80/20 for best flavor
  • 2 medium potatoes diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup bell pepper chopped
  • 1 cup corn frozen or canned
  • 1 cup black beans canned, drained and rinsed
Spices and Seasonings
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/2 cup cheddar cheese shredded, for topping
Garnish
  • 1/4 cup cilantro chopped
  • 1 medium lime cut into wedges

Method
 

Cook the Beef
  1. In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes.
  2. Drain excess fat if necessary.
Add Vegetables
  1. Add the chopped onion, garlic, and bell pepper to the skillet. Sauté for 3-4 minutes until softened.
  2. Stir in the diced potatoes, corn, and black beans.
Season and Cook
  1. Sprinkle in the chili powder, cumin, paprika, salt, and pepper. Mix well.
  2. Cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender.
Finish and Serve
  1. Remove from heat and sprinkle with shredded cheddar cheese. Cover until cheese melts.
  2. Garnish with cilantro and serve with lime wedges.

Notes
