Whisk together the mayonnaise, sour cream, taco seasoning, fresh lime juice, salt, and black pepper in a small bowl.
In a large mixing bowl, add the pre-shredded coleslaw mix, diced red bell pepper, drained and rinsed black beans, fire-roasted corn, minced jalapeno pepper, and chopped fresh cilantro. Toss these ingredients gently.
Pour your prepared dressing over the veggie mix in the large bowl. Stir until all ingredients are evenly coated.
Cover your bowl with plastic wrap and refrigerate for about 30 minutes.
Transfer your Mexican coleslaw into a serving bowl and sprinkle additional chopped fresh cilantro on top.
