Ingredients
  

  • ¾ cup mayonnaise
  • ½ cup sour cream
  • 2 tablespoons taco seasoning
  • 2 tablespoons fresh lime juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 20 ounces pre-shredded coleslaw mix shredded carrots, shredded red cabbage, and shredded green cabbage
  • 1 cup diced red bell pepper
  • 15.25 ounces black beans drained and rinsed
  • 14.75 ounces fire-roasted corn drained
  • 3 tablespoons minced fresh jalapeno pepper veins and seeds removed
  • cup chopped fresh cilantro plus additional for garnish

Method
 

  1. Whisk together the mayonnaise, sour cream, taco seasoning, fresh lime juice, salt, and black pepper in a small bowl.
  2. In a large mixing bowl, add the pre-shredded coleslaw mix, diced red bell pepper, drained and rinsed black beans, fire-roasted corn, minced jalapeno pepper, and chopped fresh cilantro. Toss these ingredients gently.
  3. Pour your prepared dressing over the veggie mix in the large bowl. Stir until all ingredients are evenly coated.
  4. Cover your bowl with plastic wrap and refrigerate for about 30 minutes.
  5. Transfer your Mexican coleslaw into a serving bowl and sprinkle additional chopped fresh cilantro on top.
