Ingredients
  

Steak and Marinade
  • 1 lb flank steak or sirloin
  • 3 tablespoons olive oil for marinade
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Grain Base
  • 1 cup quinoa or couscous
  • 2 cups water for cooking quinoa
Toppings
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup kalamata olives pitted and sliced
  • 1/4 cup fresh parsley chopped

Method
 

Marinate the Steak
  1. In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, oregano, salt, and black pepper. Add the flank steak and coat well. Marinate for at least 15 minutes.
Cook the Quinoa
  1. In a saucepan, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.
Grill the Steak
  1. Preheat the grill to medium-high heat. Grill the marinated steak for about 4-5 minutes per side for medium-rare. Remove from grill and let rest for 5 minutes before slicing.
Assemble the Bowls
  1. In each bowl, add a serving of quinoa, top with sliced steak, cherry tomatoes, cucumber, red onion, feta cheese, olives, and parsley. Drizzle with additional olive oil if desired.
