- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Season the chicken breasts with salt, pepper, and half of the dried herbs.
- Slice the zucchini and toss with olive oil, garlic, lemon juice, lemon zest, and remaining herbs.
- Layer the seasoned chicken in the baking dish and surround with the zucchini mixture.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C). Add cheese in the last 5 minutes.
- Let the dish rest for 5-10 minutes before serving.
