- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the sautéed onion and garlic with chopped baby spinach, ground chicken, breadcrumbs, Greek yogurt, fresh dill, lemon juice, dried oregano, paprika, ground cumin, salt, and black pepper. Mix thoroughly until well combined.
- Shape the mixture into patties, using about ¼ cup for each. Flatten to about ½ inch thick.
- Heat the remaining olive oil in the skillet over medium heat. Cook the patties for about 5-6 minutes on each side until golden brown and fully cooked through.
- Transfer cooked patties to a plate lined with paper towels to absorb excess oil. Serve warm with garnishes like fresh herbs or lemon slices.
