  • 4 fillets white fish (e.g., cod or tilapia) skinless
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup kalamata olives pitted and sliced
  • 1 medium red onion sliced
  • 2 cloves garlic minced
Herbs and Spices
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Lemon
  • 1 medium lemon sliced for garnish

Method
 

Prepare the Oven and Baking Dish
  1. Preheat the oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
Arrange the Ingredients
  1. Place the fish fillets in the baking dish.
  2. Scatter the cherry tomatoes, olives, red onion, and garlic around the fish.
Season the Dish
  1. Drizzle olive oil over the fish and vegetables.
  2. Sprinkle oregano, thyme, salt, and pepper evenly over the top.
Bake the Fish
  1. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.
