Preheat your oven to 375 degrees Fahrenheit. Cook the lasagna noodles according to the package instructions, but take them out about 3 minutes early. Toss them in a drizzle of olive oil to prevent sticking.
In a large sauté pan over medium heat, cook the ground beef until browned. Add minced garlic, dried oregano, salt, and pepper, stirring until aromatic. Pour in spaghetti sauce and stir to combine.
In a separate bowl, combine chopped spinach, half of the shredded mozzarella, half of the grated Parmesan, cottage cheese, and eggs. Season with salt and pepper.
Spread about 1 cup of meat sauce at the bottom of a greased 9x13 inch baking dish. Lay down three noodles lengthwise over the sauce.
Spread one-third of the spinach filling over the noodles, then drizzle half a cup of meat sauce before adding another three noodles on top.
Repeat the layering process with another third of the spinach filling and half a cup of meat sauce, followed by three more noodles.
For the final layer, spread any remaining spinach filling and drizzle half a cup of meat sauce over the last three noodles. Top with remaining mozzarella and Parmesan.
