Ingredients
  

Chicken and Coating
  • 4 pieces boneless, skinless chicken breasts pounded to 1/2 inch thick
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1 cup bread crumbs preferably panko
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Toppings
  • 4 slices ham thinly sliced
  • 1 cup Swiss cheese shredded
  • 1 cup pineapple slices for serving

Method
 

Prepare the Chicken
  1. Preheat the oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness using a meat mallet.
  3. Season the flour with salt and pepper in a shallow dish.
  4. Dredge each chicken breast in the flour, then dip in the beaten eggs, and finally coat with bread crumbs.
Bake the Chicken
  1. Place the breaded chicken breasts in a baking dish.
  2. Bake in the preheated oven for 20 minutes.
  3. Remove from the oven, top each breast with a slice of ham and a generous amount of Swiss cheese.
  4. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve
  1. Serve the Malibu chicken hot, garnished with pineapple slices on the side.

Notes
