Prepare the Chicken
- Preheat the oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness using a meat mallet.
- Season the flour with salt and pepper in a shallow dish.
- Dredge each chicken breast in the flour, then dip in the beaten eggs, and finally coat with bread crumbs.
Bake the Chicken
- Place the breaded chicken breasts in a baking dish.
- Bake in the preheated oven for 20 minutes.
- Remove from the oven, top each breast with a slice of ham and a generous amount of Swiss cheese.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve
- Serve the Malibu chicken hot, garnished with pineapple slices on the side.
