Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1 cup milk whole or 2%
  • 1 tbsp baking powder
  • 1/4 tsp salt
For the lemon filling
  • 1 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup all-purpose flour

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Stir in melted butter and milk until smooth.
  4. Pour the batter into a greased 9x9 inch baking dish.
Make the lemon filling
  1. In another bowl, whisk together lemon juice, lemon zest, sugar, eggs, and flour until well combined.
  2. Pour the lemon mixture over the batter in the baking dish.
Bake the cobbler
  1. Bake in the preheated oven for 45 minutes or until the top is golden brown and set.
  2. Allow to cool slightly before serving.
