Method
Prepare the crust
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- Stir in melted butter and milk until smooth.
- Pour the batter into a greased 9x9 inch baking dish.
Make the lemon filling
- In another bowl, whisk together lemon juice, lemon zest, sugar, eggs, and flour until well combined.
- Pour the lemon mixture over the batter in the baking dish.
Bake the cobbler
- Bake in the preheated oven for 45 minutes or until the top is golden brown and set.
- Allow to cool slightly before serving.
