Ingredients
  

Pasta
  • 8 oz elbow macaroni
Cheese Sauce
  • 2 tbsp butter unsalted
  • 2 tbsp all-purpose flour
  • 2 cups milk whole milk preferred
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika optional
Topping
  • 1/2 cup bread crumbs for topping
  • 2 tbsp butter melted

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
  1. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, whisking constantly.
  2. Gradually whisk in the milk, continuing to whisk until the mixture is smooth and thickened, about 5 minutes.
  3. Remove from heat and stir in the cheddar and mozzarella cheeses until melted and smooth. Season with salt, pepper, and paprika.
Combine and Bake
  1. Preheat the oven to 350°F (175°C). In a large bowl, combine the cooked macaroni and cheese sauce, mixing well.
  2. Transfer the mixture to a baking dish. In a small bowl, mix the bread crumbs with melted butter and sprinkle over the top of the macaroni and cheese.
  3. Bake in the preheated oven for 15-20 minutes, or until the top is golden brown and crispy.

Notes
