Method
Prepare the Eggplant
- Slice the eggplants into 1/2 inch rounds and sprinkle with salt. Let them sit for about 10 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat them dry with paper towels.
Season and Cook
- In a mixing bowl, combine the garlic powder, paprika, black pepper, and oregano.
- Brush the eggplant slices with olive oil and coat them with the seasoning mixture.
- Preheat the air fryer to 375°F (190°C).
- Place the seasoned eggplant slices in the air fryer basket in a single layer. Cook for 15-20 minutes, flipping halfway through, until golden brown and crispy.
Serve
- Remove the eggplant from the air fryer and serve warm as a side dish or light main course.
