Ingredients
  

Eggplant Preparation
  • 2 medium eggplants sliced into 1/2 inch rounds
  • 1 teaspoon salt for sweating the eggplant
  • 1 tablespoon olive oil for brushing
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano

Method
 

Prepare the Eggplant
  1. Slice the eggplants into 1/2 inch rounds and sprinkle with salt. Let them sit for about 10 minutes to draw out moisture.
  2. Rinse the eggplant slices under cold water and pat them dry with paper towels.
Season and Cook
  1. In a mixing bowl, combine the garlic powder, paprika, black pepper, and oregano.
  2. Brush the eggplant slices with olive oil and coat them with the seasoning mixture.
  3. Preheat the air fryer to 375°F (190°C).
  4. Place the seasoned eggplant slices in the air fryer basket in a single layer. Cook for 15-20 minutes, flipping halfway through, until golden brown and crispy.
Serve
  1. Remove the eggplant from the air fryer and serve warm as a side dish or light main course.
